Easy Chicken, Potato & Green Bean Sheet Pan Dinner

This easy chicken, potato and green bean sheet pan dinner combines juicy chicken, crispy roasted potatoes, and tender green beans for a simple homemade weeknight meal with minimal cleanup.

Ingredients
  

  • 4 boneless, skinless chicken breast
  • 1.5 lbs baby potatoes halved or quartered
  • 12 oz fresh green beans trimmed
  • 3 tbsp olive oil divided
  • 1.5 tsp garlic powder
  • 1 tsp salt
  • .5 tsp pepper
  • 2 cloves garlic minced

Method
 

  1. Preheat oven to 425℉. Line a sheet pan with parchment paper or foil.
  2. Season the potatoes. Toss halved or quartered potatoes with 1 1/2 tbsp olive oil, 1/2 tsp garlic and 1/2 tsp salt and pepper.
  3. Roast the potatoes first. Spread potatoes over the sheet pan, cut-side down, and roast for 20 minutes.
  4. Season the chicken. Toss the chicken with 1 tbsp olive oil, 1 tbsp garlic, salt and pepper.
  5. Add chicken. Remove the pan from the oven and add the chicken. Roast for 12-15 minutes.
  6. Add the green beans. Toss green beans with the remaining 1/2 tbsp olive oil and a little salt and pepper. Add them to the pan around the chicken and potatoes.
  7. Finish roasting for another 8-12 minutes, until the chicken reaches 165℉ and the potatoes are tender and golden.

Notes

To make this dish extra flavorful, Mix melted butter with lemon juice and drizzle over the chicken, potatoes and green beans before serving.
Easy variation: Add sliced carrots, broccoli, or bell peppers to the ban for an even bigger sheet-pan dinner.
