Homemade Strawberry Jam

This easy homemade strawberry jam recipe is made from fresh strawberries and simple ingredients for a sweet, flavorful fruit spread. Perfect for toast, homemade biscuits, pancakes, muffins and more. This strawberry jam is an easy from-scratch recipe you'll want to make again and again.

Ingredients
  

  • 6 cups strawberries (washed and chopped) (2 lbs)
  • 3 cups granulated sugar
  • 2 tbsp lemon juice
  • 1 tsp vanilla extract (optional) helps reduce foaming
  • 1 tbsp butter (optional) helps reduce foaming

Method
 

  1. Prepare the strawberries: Hull and chop the strawberries into small pieces.
  2. Combine: Add strawberries, sugar and lemon juice to a heavy-bottomed pot. Stir gently and let sit for 15-20 minutes so the berries release their juices.
  3. Cook: Bring the mixture to a rolling boil over medium- high heat, stirring frequently.
  4. Simmer: Reduce heat slightly and continue cooking for 20-30 minutes, stirring often.
  5. Check the consistency: Place a small spoonful on a plate and let cool. With a clean finger, check that the jam isn't too runny. It will thicken as it stands.
  6. Cool: Remove from heat and let the jam cool for about 10 mins.
  7. Store: Spoon into clean jars and cool completely then refrigerate.

Notes

Refrigerator storage: Approximately 2-3 weeks.
Tip: Don't overcook them. The jam will thicken more as it cools. Its better to stop when they're slightly looser than your desired final consistency.
